I dry hopped this beer using pellets in the secondary, 2 weeks before kegging it. I had two carboys: Did one with cascade, and one with simcoe.

The hops react violently with the beer, and cause a terrible blow off, so next time, be sure to have plenty of headroom in the carboy. The hops do not settle out very well either, so I'll probably use a hop bag next time, and do them in the keg, and remove them before carbonating it.

When I racked from the carboy to my first keg, I just siphoned it normally. Lots of hop residue int he beer in the keg. What a mess. I hope if settles in the keg and gets pushed out the dip tube int he first several pints, and then is gone. For the second carboy, I siphoned through a super fine hop bag, and it caught all of the residue. Whew!

I was over on my water amounts by about two gallons.  This was because i used two gallons of water to dissolve my LME into so I did not have to do it in the boil kettle, as it is hard to stir it in the big kettle.

Fly sparged.  Brewhouse efficiency was 76.8%

I skipped the 1 lb of DME that I was planning to use, and had calculated that I needed to hit the target gravity.  Sure enough, I ended up .004 short.  Still, not too bad.

I changed the hoses to my plate chiller, and it is cooling much better now too.  NICE!

Considering that I will have 12.5 gallons in my fermentor, the OG is not too bad.  Had I boiled off another gallon, it might have been right on the money.

Both of my smack packs were good this time, so that's all I used for yeast.  I forgot to use yeast nutrient/energizer in the boil
